Our Story

Veggie Joy Farms was founded in March 2025 by Stacy Tollefson, PhD.  Stacy was trained at the University of Arizona's Controlled Environment Agriculture Center (CEAC).     After earning her PhD in Agricultural and Biosystems Engineering, she stayed on at the CEAC as an Assistant Professor of Practice, teaching the next generation of hydroponic farmers. 

From 2021-2023,  Stacy went into the cannabis industry for two years, working as the Director of Cultivation for a large indoor growing operation.  However, her  love for all things vegetables soon took her Saratoga, Wyoming to be Greenhouse Director for Brush Creek Luxury Ranch.   With over 20,000 SF of greenhouse, their seed-to-table concept included growing everything from tomatoes and lettuce, to strawberries, root crops, and edible flowers.  This experience solidified her desire to start her own seed-to-table greenhouse business. While in Wyoming, she made plans to return to Tucson and start her business.

She opened Veggie Joy Farms in Tucson, Arizona, in March 2025.  The farm consists of about 2 acres with two large greenhouses and lots of chickens.  

The farm is operated by Stacy and her two adult children.  The farm has a collaboration with the University of Arizona to provide internship experiences for students.
